Universal CityWalk Chef Ed Colleran Gets Published


The national Recipes for Healthy Kids Competition was held last year and was sponsored by the U.S. Department of Agriculture in support of First Lady Michelle's Let's Move! initiative and based on new school meal patterns. CityWalk's Chef Ed Colleran submitted one of his recipes, 'Roasted Fish Crispy Slaw Wrap', and his healthy creation was selected as one of the top 30 kid-tested, kid-approved recipes to be included in the book!


The recipes in the cookbook feature foods both children and adults should consume more of: dark green and orange vegetables, dry beans and peas, and whole grains. All of these healthy recipes are low in total fat, saturated fat, sugar and sodium. The competition provided the perfect opportunity for school nutrition professionals, students, parents, chefs, and community members to cook up some new ideas and get children excited about making healthy choices.
